Ingredients

1 head, large (6-7″ dia) Cauliflower raw
1 medium (2-1/2” dia) Onions raw
1/2 cup chopped Celery raw
3 clove Garlic raw
1/4 cup Olive or extra virgin olive oil
3/4 tsp Spices poultry seasoning
1/2 tsp, ground Thyme drie
1/2 tsp Sage ground
1/2 tsp Salt
1/2 tsp Pepper black
1/4 cup Parsley fresh or raw herb

1/4 cup, chopped Pecans raw

Instructions
  1. Preheat oven to 425F. Line a large baking sheet (or 2) with parchment paper. If you do not have parchment paper, spray a non-stick baking sheet with cooking spray.
  2. Prepare the cauliflower by cutting it into small florets. For uniform cooking, cut the florets into evenly-sized pieces.
  3. Place the cauliflower, onions, celery, and garlic together into a large bowl. Toss with olive oil and seasonings.
  4. Spread the mixture evenly on the baking sheet. Roast in the oven for 15 minutes.
  5. Remove cauliflower mixture from the oven and add fresh parsley and pecans. Mix well and roast for an additional 10-15 minutes, until pecans have started to brown, cauliflower is soft, and onions have started to caramelize.
