Low-Carb Cauliflower Breadsticks

Ingredients
- 1 head cauliflower
- ½ cup mozzarella cheese shredded
- ½ cup Parmesan cheese shaved, plus more for garnish
- 1 large egg
- ½ tablespoon garlic minced
- ½ tablespoon fresh basil chopped, plus more for garnish
- ½ tablespoon fresh Italian flat-leaf parsley chopped, plus more for garnish
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¾ cup mozzarella cheese shredded
- Marinara sauce for dipping

Preheat your oven to 425°F and line a baking sheet with parchment paper or a silicone baking mat

Core the cauliflower and cut it into florets. Add them to a food processor and pulse until the texture resembles rice (no need to cook first).

In a large bowl, combine the riced cauliflower, 1 cup shredded mozzarella, ¼ cup grated parmesan, 1 egg, minced garlic, chopped fresh basil and parsley, plus salt and pepper to taste.

Transfer the mixture to the prepared baking sheet and press it into a 9×7-inch rectangle, about ¼ inch thick.

Bake for 10–12 minutes, or until set and lightly golden.

Remove from the oven and top with more shredded mozzarella. Return to the oven and bake for another 5–7 minutes, until cheese is melted and edges are golden brown.

Cool for 10 minutes before slicing into (12) breadsticks. Garnish with fresh herbs and parmesan, and serve with marinara sauce.
