Makes 4 servings | 20–25 minutes prep

Ingredients:
  • 8 large eggs
  • 1/2 cup butter, plus extra for frying
  • 4 oz. cream cheese
  • 2 Tbsp. baking powder
  • 1 Tbsp. vanilla extract
  • 1/4 cup sugar substitute (such as monk fruit sweetener)
  • 1/4 tsp. cinnamon
  • Keto or sugar-free maple syrup, or fresh fruit for topping
DIRECTIONS:
  1. Line a 5×7-inch loaf pan with parchment paper; set aside.

  2. Melt the cream cheese and butter.

  3. In a blender, combine eggs, baking powder, vanilla, cinnamon, sugar substitute, and the melted cream cheese and butter. Blend until smooth, then pour into the loaf pan.

  4. Bake for 25 minutes at 350°F.

  5. Let cool before cutting the French toast into strips.

  6. Butter a skillet and preheat to 350°F.

  7. Cook the French toast strips until browned on all sides.

  8. Top with syrup or fruit and enjoy!
