Flourless French Toast Sticks

Ingredients:
- 8 large eggs
- 1/2 cup butter, plus extra for frying
- 4 oz. cream cheese
- 2 Tbsp. baking powder
- 1 Tbsp. vanilla extract
- 1/4 cup sugar substitute (such as monk fruit sweetener)
- 1/4 tsp. cinnamon
- Keto or sugar-free maple syrup, or fresh fruit for topping
DIRECTIONS:

Line a 5×7-inch loaf pan with parchment paper; set aside.

Melt the cream cheese and butter.

In a blender, combine eggs, baking powder, vanilla, cinnamon, sugar substitute, and the melted cream cheese and butter. Blend until smooth, then pour into the loaf pan.

Bake for 25 minutes at 350°F.

Let cool before cutting the French toast into strips.

Butter a skillet and preheat to 350°F.
