Green Curry Chicken with Cauliflower

INGREDIENTS:
- 2-3 chicken breasts
- Green Thai curry paste
- Head of cauliflower
- Canned Coconut Milk
- Green onions
- Curry Powder
- 1/4 c. basil
- 1/2 c. chopped peanuts
- Sriracha
DIRECTIONS:
- Preheat the oven to 450 degrees.
- Chop head of cauliflower into florets, coat with olive oil and curry seasoning. Put in the oven.
- Chop up green onions, basil, peanuts, and chicken breasts.
- Add olive oil and chicken breasts to pan on stovetop and sear. Stir in green curry paste and coconut milk, let simmer. During the last 5 minutes of cooking add green onions and basil.
- Take cauliflower out of oven and dish up. Top with green curry chicken, crushed peanuts, and sriracha (if desired). Enjoy!
