Tasty Mustard Glazed Chicken
Looking for a flavorful chicken dinner that’s easy to make? This Maple Mustard Chicken combines the sweetness of maple syrup with tangy stone-ground mustard, fresh thyme and garlic for a delicious meal that’s ready in about 30 minutes. It’s high in protein and perfect for a weeknight dinner.
Ingredients
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons olive oil
- 1/4 cup maple syrup
- 1/4 cup fat-free, low-sodium chicken broth
- 2 garlic cloves, thinly sliced
- 2 teaspoons chopped fresh thyme
- 1 tablespoon stone-ground mustard
- 1 tablespoon apple cider vinegar
- Optional: Garnish with spinach
Directions
- Preheat the oven to 400 F.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Season the chicken with salt and pepper. Add the chicken to the skillet and cook for about 2 minutes per side, or until lightly browned. Remove the chicken from the pan.
- Add the chicken broth, garlic, maple syrup and thyme to the skillet. Bring to a boil and cook for 2 minutes, stirring frequently.
- Stir in the stone-ground mustard and apple cider vinegar. Cook for 1 minute, stirring constantly.
- Return the chicken to the skillet and spoon the sauce over the chicken.
- Transfer the skillet to the oven and bake for about 10 minutes, or until the chicken reaches an internal temperature of 165 F.
- Remove the chicken from the skillet and let it rest for 5 minutes.
- Meanwhile, return the skillet to the stovetop and cook the sauce over medium heat for about 2 minutes, stirring constantly, until it thickens slightly.
- Spoon the maple mustard sauce over the chicken before serving.
